A Sunny Spring Lunch for Two with Rosé

This week we Seattleites and Woodinville residents were delighted to be treated to some sunny days, finally! It’s been a long winter of dreary and rainy days, so the sunshine was very welcome.

I decided to invite a friend over for lunch. Like me, she works at home, and we can occasionally meet up for a quick lunch on the occasional workday.

I opened a bottle of Lauren Ashton Cellars‘ 2017 Rosé, thinking it couldn’t hurt to enjoy a small glass before we got back to work in the afternoon.

I set up a table outdoors, delighted that it was not only warm enough to eat outside, but also sunny enough we’d need to seek out shade for our meal! I might have surreptitiously sampled the wine, just to be sure it was tasty enough to serve to my friend, of course.

Since my friend and I both were planning to go out for early dinners with our boyfriends, I kept lunch simple, light and healthy. I made these small salads with just romaine, yellow cherry tomatoes, carrots and a sprinkling of Asiago cheese.

This plate holds Opal apples and some white cheddar slices from the Woodinville Costco.

I toasted sourdough bread and created an open face sandwich with avocado, sprinkling it liberally with black pepper and with Fleur de Sel from Trader Joe’s. I waited til the last possible minute to put the mayonnaise on the bread, not wanting it to sit and congeal.

These open face radish and cream cheese sandwiches were easy to assemble. I sliced the radishes paper thin using my mandoline, and toasted the bread so the cream cheese wouldn’t tear it when I was spreading. The radishes needed quite a bit of salt and pepper for flavoring – but not so much they might overpower the delicate

I used perhaps too large of clumps of dill on top – they look pretty, but aren’t quite pleasant to bite into!

I thought these were the perfect portion sizes for a small light lunch, but could have added a cup of potato leek soup or some cucumber and butter finger sandwiches too if we’d been slightly hungrier.

Take advantage of every opportunity you have to eat lunch outdoors, meet a friend on a workday, and enjoy a small glass of wine in the sunshine!
